Easy, Healthy Pancakes
Guys. GUYS. I basically took the simple banana + egg pancake recipe and upgraded it to party-in-your-mouth level good. These pancakes are super easy to whip up and they are flavorful enough that you really don’t have to overdo it on the toppings like I did. A little maple syrup will do you just fine. But anyways, keep reading for the recipe!
1 medium to large banana
1/4 cup Kodiak Cakes mix (I used the Whole Grain Buttermilk Protein Packed Flapjack and Waffle mix but you could honestly use any type of mix or even flour if you’d like! I’ve made this with ground oats as well!)
1 tsp powdered psyllium husks (I used Yerba Prima) *optional, but totally worth it
1 serving Lily’s unsweetened chocolate chips *optional, but also worth it
Toppings of choice
Mash the banana with a fork in a medium sized mixing bowl
Add in the eggs and stir to combine
Add in the pancake mix and stir to combine
Add in the psyllium husk powder and stir to combine. Do not add this at the same time as your pancake mix or you’ll have gloopy clumps to have to break down!
Mix in your chocolate chips if using. Save a few to sprinkle on top
Heat a nonstick skillet on medium heat
Spray a little cooking spray (or oil) on the skillet and drop 3-4 tablespoons of the batter into the center, spreading it out with the spoon so you have a flat, even pancake
Cook until edges are dry. Take the spatula and peek under an edge for your preferred shade of brown on the bottom. Flip. ***This batter will not bubble like traditional pancake batter, so it is important to check underneath for optimal flip time!
Cook this side for 1-2 minutes or until a little peek underneath shows a nice browned bottom
Repeat. This recipe will give you three 6-inch pancakes. Serve with your preferred toppings and enjoy!!
