Healthy Banana Pancakes

Banana pancakes are a thing - and I'm not talking about that old Jack Johnson song. I'm talking a quick, easy, and healthy pancake that you can whip up in just as little time as you would pulling out the pancake mix that is full of flour and lacks the nutrients that these pancakes would bring you.

All you need are three ingredients for the base, but I have also included the little mix-ins that are technically optional but highly recommended.

Ingredients:

  • 1 ripe banana
  • 1/2 cup oatmeal (dry, uncooked)
  • 2 Egg whites (6tbs liquid egg whites)
  • Pinch of salt (optional)
  • Pinch of cinnamon (optional)
  • 1/2 tsp vanilla extract (optional)

Steps:

  1. Add your oats to a blender or food processor. I use a Ninja bullet blender with the large cup attachment. Pulse the oats a few times to break them down into a small grain powder.
  2. Open the blender and add all your other ingredients. Blend until smooth and your mixture is like a traditional batter consistency. It might be a little runnier, but should not be watery. If your mixture is too watery, add more oats. If it is too thick, add egg whites or water.
  3. Heat a nonstick pan on medium heat, and then spray with cooking spray or oil. Butter will be great too, but we're sticking with healthier options here :)
  4. Measure out 1/3 cup of your mixture and spread in the center of your pan. It will not bubble like traditional pancakes, so watch for the edges as they will start to dry and brown when your pancakes are ready to flip. I tend to peek under the surface with my spatula, so you can do that too if you prefer.
  5. Flip your pancake and let cook an additional minute or two or until your peek test comes back with a brown bottomed pancake.
  6. Plate your pancake and spray your pan, repeating steps 4-5 until you are out of batter. I was able to make three pancakes of the same size with this amount, so you will need to multiply this recipe if you are serving for 2+
  7. Top with fruit or your favorite toppings, and drizzle with honey or sugar free maple syrup. Enjoy!
