During my keto phase, I was experimenting with all kinds of ingredients in order to recreate a pancake or a waffle because your girl was DESPERATE for some carbs. I was able to come up with a protein pancake which I topped with melted butter and sweetener to make a “syrup” to go with it. These pancakes are a bit dry, and don’t do a good job at soaking up the syrup, so if you want a little moisture and are okay with the carbs, feel free to add in half a smashed banana to the batter.
½ TBS Butter
1 Scoop Flavored Protein Powder
1 TSP Vanilla Extract (optional)
1. Mix all ingredients in a bowl. Room temperature butter will be easiest to work with.
2. Heat a skillet on medium heat. Spray cooking spray or add a little butter to the pan before you add the batter.
3. Add some batter (amount is up to your preference) and use a spatula to check the bottom of the pancake after about two minutes. Flip when bottom is browned and cook for another minute.
4. Add syrup or toppings of choice. I suggest you use something wet/moist to make up for the dryness of these!
